Semolina Recipe

This recipe makes a wonderful breakfast that keeps you nourished till lunch time – well I find it lasts me that long. This makes quite a bit, I usually make half and that does 3 of us. If you wanted to you could use any extra by rolling them into balls and then rolling them in LSA, really well chopped almonds or toasted sesame seeds and have as a snack. My husband likes them like this and will take them for morning tea. Would love to hear what you think.

This very nourishing food is good in all seasons and good for all constitutions. This food is also called Prasad which means sacred food.

 INGREDIENTS

 1 cup semolina

2-2 ½ cups full cream milk

1 handful of raising or sultanas

½ tspn cardamom powder

½ tspn cinnamon powder

1 handful slivered or flaked almonds

raw sugar

1 tbspn ghee

 

METHOD

Heat ghee in a pot. Add semolina to it and gently roast over medium to low heat. Careful not to burn.

Wait until it starts turning to a pinkish brown colour (stirring continuously) and ghee starts to separate to the sides of the pan.

Add ½ cup milk and mix well to avoid lumps. Continue adding remaining milk and cook. Add raisins/sultanas, cardamom, cinnamon, and sugar to taste.

Stir continuously for another few minutes until it thickens and moves with the spoon. Garnish with almonds and serve hot. ENJOY

 

NOTE:            If you want to use whole almonds please first soak them in hot water and remove the skin. The skin of almonds just doesn’t like to digest.
